For decades, the image of the American backyard griller has been narrowly defined. The traditional archetype featured a serious pitmaster focused entirely on technique, perfect sears, and temperature control. However, this intense, mastery-driven approach creates unnecessary pressure and no longer reflects the reality of most backyard cookouts. Today’s consumers are shifting away from high-stakes performance, seeking instead an experience centered on relaxation, simplicity, and social connection around the fire.
To understand this cultural shift, Challenge Butter commissioned comprehensive research into modern grilling habits, identifying new consumer personas and regional trends. We sat down with culinary expert and Challenge Butter partner Matt Moore to discuss how the brand provides simple, flavorful solutions for this evolving culture. In this interview, we explore the new motivations behind firing up the grill and how everyday ingredients can transform the outdoor cooking experience.
Q: Recent research reveals that the stereotypical “Pitmaster” makes up less than a third of grillers today. How is the reality of modern grilling shifting away from this intense, technique-driven approach?
Matt Moore: While each discipline, such as grilling, will always have a growing tier of experts, I believe the fact that 87% of American households grill, with 65% of those grilling weekly, speaks to the fact that there is truly enough room for everyone! In recent years, advancements in technology coupled with social and online platforms have fostered a community for pitmasters (experts) to take their grilling and BBQ to the next level. At the same time, more exposure to grilling has also allowed a majority to enjoy the art of grilling without too much worry about perfection.
Q: The data shows the “Zen Griller” fires up the grill most frequently, often using it as a tool for calm and relaxation. How does the act of grilling serve as a daily reset and put you back in control?
Matt Moore: So often in life – work, raising kids, long-term plans – we do not see the fruit of our labor until weeks, months, or even years later. It’s the exact opposite effect with grilling. For me, grilling provides me with a chance to conceptualize, execute, and enjoy a plan (that also serves others) on a nightly basis. It’s the ultimate payoff that balances creativity, hospitality, and enjoyment, leading to calm, relaxation, and satisfaction.
Q: Another prominent persona is “The Host,” who values hospitality and uses butter as a “secret weapon.” Why do you believe the grilling experience is ultimately more about the people than just the food itself?
Matt Moore: I often say that a meal is only as good as its ingredients. The same thing could be said for sharing said meal with good company. Grilling is the ultimate form of hospitality — the ambiance of smoke and fire is primal — allowing the host to create a connection and share the fruits of their labor with others. A meal is best enjoyed in the comfort and conviviality of community.

Q: The study uncovered fascinating regional divides—the Northeast drops from 99% summer grilling to just 14% in winter, the South holds steady at 30% year-round, and the West sees the shortest season overall. How do these weather patterns impact our outdoor cooking habits?
Matt Moore: Frankly, I believe this trend is actually shifting more towards grilling year-round, no matter the geography. In the old days, grilling was synonymous solely with summer, especially in colder winter environments. But as the quality of grills has improved — along with awareness — I believe more and more people are seeking the benefits of grilling year-round. As a serial griller myself, I always say that no matter the course, the ingredient, or the season, we can all make our food better on the grill.
Q: You often compare grilling to a yoga class or meditation. How does the quick, 30-to-60-minute cycle of outdoor cooking offer a unique sense of satisfaction in a world of delayed gratification?
Matt Moore: Exactly, and that’s what makes it so powerful. In our day-to-day lives, we are constantly dealing with delayed gratification; waiting weeks or months for professional projects to finish, long-term investments to pay off, or even just raising kids. Grilling completely flips that script. You have this tangible, predictable 30-to-60-minute window where you start with raw ingredients, mindfully manage the fire, and immediately see, smell, and taste the fruits of your labor. It acts as a mental reset, much like a yoga class or a meditation session, clearing your head and giving you that instant, deeply satisfying sense of accomplishment before the sun goes down.
Q: For those who might feel intimidated by the grill and want to focus more on the present moment instead of stressing over perfection, what is your top piece of advice?
Matt Moore: My entire culinary career has focused on demystifying the process and opening up my family table to everyone — friends, neighbors, strangers, and more. That’s the great part about being hospitable, and food is the currency that we can exchange with others. On top of that, knowledge (recipes, techniques, skills) is not something that everyone has in their repertoire. Through my books, television shows, and socials — I, along with a nation of Serial Grillers, want to invite folks to enjoy the moment — don’t sweat the small stuff — and get grilling. The results are always worth it.

To help readers discover their unique cooking style, Challenge Butter developed an interactive grilling personality quiz available at Challenge Dairy Grilling Quiz. After taking the assessment himself, chef and author Matt Moore naturally landed on “The Host” persona. Participants who complete the quiz receive tailored, butter-forward recipe ideas, such as Moore’s favorite Garlic Parmesan Grilled Shrimp Skewers, customized specifically to match their individual approach at the grill.
